Brinjal chutney recipe

Brinjal chutney is famous throughout India but the preparation below is south Indian. A good way to distinguish a south India recipe is the presence of curry leaves without which many South Indian dishes will loose their delicacy. This chutney is primarily consumed during main course of the meal.

Ingredients for Brinjal chutney:

  1. 4 medium brinjals
  2. 10 to 12 green/red chilies
  3. 2 tsp tamarind
  4. 2 tsp oil
  5. Oil per taste

For seasoning:

  1. Channa dal: 1 tsp
  2. Urad dal: 1 tsp
  3. Mustard seeds: 1tsp
  4. Asafetida (hing): A pinch
  5. Jeera: 1/2 tsp
  6. Red chilies: 2-5 pieces
  7. Curry leaves

Method of preparation for Brinjal chutney:

Take 4 medium size brinjals and cut it into small pieces. Pour 1 tsp of oil in a pan and heat it. Add pieces of brinjal and chilies in the pan and fry it until brinjals gets soft. Grind the mixture once it is cool and add salt and tamarind to it. It is now time for preparing seasoning. Heat oil in a pan and add curry leaves, hing, red chilies, jeera, mustard seeds, channa dal and urad dal to it. Once splutter of mustard seeds happens, add the seasoning to grounded brinjal.
